When you create a new activity fee for a customer, but you don't want them to pay until the next one, you'll need to skip the fee writting the date when they're going to start paying on the "Next fee date" field, and also write the day before on the "Fees paid to" field.
In the case of the next screenshot, the customer started the 1st of May on the activity, but he won't be paying until June.
