To set up payment methods (to be able to select them on the drop down list, inside any service configuration) you have to go to:
System -> Economic aux. -> Payment Methods
On the next window you can create a new payment method with the button "New", edit one of the existing payment methods with the button
Or delete them with

If you press on Edit, you'll see the next window, where you can edit that payment method.
